PlantPure “Make It and Take It” Cooking Class: What do I do with all this ZUCCHINI?

Lock the doors! The zucchini are coming! The zucchini are coming!

If you (or your neighbors) grow zucchini, you may wonder what to do with it all. We’ll be making several different recipes using zucchini, including zucchini rollups stuffed with cashew cheese, zucchini pasta with tomato sauce, and creamy kale and zucchini noodles. Bring 3 small containers with lids to take some of the sauces home to use with some home grown or farm fresh zucchini.

EAT YOUR VEGGIES! Join us for a PlantPure (whole food plant-based) potluck dinner. Please bring a fully plant-based dish to share (no meat, fish, dairy, eggs or honey). If you are veg curious and feel a bit daunted by preparing a PlantPure dish, feel free to bring some fruit, or hummus and chips or crudités, or something vegan from the deli. If possible, bring a place setting so that we generate less waste, along with a friend or two!

Mindful Monday Screening of WALL-E

WALL-E is a delightful animated film that is appropriate for children and adults alike. Imaginative and fun, this film also inspires contemplation of our lifestyle and impact on the environment.

PlantPure “Make It and Take It” Cooking Class: Watermelon Gazpacho

Aaaah Summer… What can be more refreshing than a delicious Watermelon Cucumber Gazpacho. This is a Hands-On Class provides a perfect opportunity practice knife skills. If possible, bring your favorite chef’s knife. There will be a few knives available, but it’s best to get accustomed to the knife you use at home.

If you’d like to take home a full quart of gazpacho, please bring the following: 1 small cucumber, 1 red bell pepper, 1 yellow bell pepper, 1 small jalapeno pepper, a quart jar. (organic ingredients if possible, please)
